fake omelette
Ingredients:
100 g. Chickpea Flour
1 Courgette
1 slice Speck (optional)
3 spoons Grated Parmesan Cheese
Water
2 pinches Salt
1 spoon Mix of Thyme, Oregano, Rosemary
Directions:
Put the flour in a large bowl, add some water, always stirring, until you reach a yoghurt-like consistency. Cut the courgette into small pieces or julienne. Add them in the bowl with cheese, herbs, salt/pepper and little cubes of speck if you want.
Mix well. Put the dough in a preheated pan (previously a little greased with olive oil). Cook on medium heat for 10 min, then turn over the omelette and cook for other 10 minutes. Let it cool for a while before eating.
